1/4 cup coconut oil (refined will not have a coconut taste if that turns you off) or 1/4 cup butter – MELTED (I used butter)
1/2 cup vanilla whey protein (I used Dymatize Elite Whey Isolate Birthday cake flavor which has 1 gm of carbs
1 tsp baking powder
1 tbs slivered almonds
1 tsp unsweetened coconut shreds
1 tsp coconut milk (or almond)
2 tbs water
Preheat oven to 350F
Melt the oil/butter in the microwave, Mix the dry ingredients together, then mix into the wet until all combined. Should have a nice dough that you can form into balls – these are not drop cookies. If the dough is a little dry, add a little water and remix. Again, you want something you can roll, not spoon out. Once combined, take about a tablespoon of dough at a time, roll into a ball, then put it on a cookie sheet lined with parchment or silicon baking mat. Flatten out on the sheet, Pop in the oven for 5-8 minutes or until the edges start to brown. These cook up rather quickly so watch them. Remove from oven, let cool to touch before moving to rack to completely cool!!
