Eggplant Saute

2 tbs Avocado Oil

1 tsp cumin seeds

pinch of turmeric

3 garlic cloves

2 long Chinese eggplants

salt/chili powder as required

1 tsp freshly squeezed lemon juice

Add 1 tbsp of avocado oil, and once its hot add cumin seeds and turmeric. Optionally you can add minced garlic cloves. Once they are well sauteed, add the chopped eggplant and ensure that the oil is well coated on to them. Let it cook for about 5-6 minutes with occasional stirs. Once the eggplant is tender add some salt and cayenne pepper/red chili powder to taste. Garnish with cilantro/basil or oregano and give a squeeze of lemon juice.
