Another vegetarian recipe inspired/adapted from Hobbits Keto Bread

Ingredients (makes 10 slices):

  • 5 tbsp coconut flour
  • 5 tbsp Whey Protein Isolate Powder (Unflavored) or Bulk Unflavored or 6 tbsp Vital Wheat Gluten Flour (I used VWG)
  • 2 tbsp butter (melted)
  • 2 tbsp Inulin Powder
  • 2 tsp coconut oil (melted)
  • 1.5 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp Xanthan Gum
  • 1.5 tsp Apple Cider Vinegar
  • 4 tsp Bob’s Red Mill  Egg Replacer
  • 1/8 cup warm coconut or almond milk
  • 1/2 envelope (about 1tsp) of fast-rising yeast
  • 1 whole jalapeno
  • 1 tsp dried oregano/basil each
  • 1 tsp red chili powder
  • Preheat oven to 350F
  • Warm the milk to a little above body temp, then dissolve the yeast in it.Get out a bread pan – I used a 4×8. If not silicone, lightly grease.

    Dump all the ingredients (including milk-yeast mixture) into a blender or food processor. Melt the butter, coconut oil,  jalapeno, chili powder, basil, oregano and then blend process until well combined and a little thick – think cake batter consistency. Pour spoon into your greased bread pan(if it’s not silicone), then spread smooth with spatula or back of a spoon. Bake it for 45 minutes.
