Crispy Okra Fry

200-250 gms okra
¼ medium size onion, chopped (optional)
¼ tsp cumin seeds
½ inch ginger and 2-3 garlic, crushed or made to a paste in a mortar-pestle
1 tsp coriander powder
¼ or ½ tsp red chili powder
½ tsp turmeric powder
½ tsp amchur powder/dry mango powder
salt as required
1 cup  coconut oil and/or 2 tsp olive oil

Rinse okra well in water and dry them on a large plate with a paper towel or  kitchen towel. Remove the base and stalk while chopping  into the desired size. Heat coconut oil a pan and ensure its temperature is hot enough to deep fry the okra.  Once the oil is hot enough add the chopped okra and deep fry them. In another pan add 2 tsp of olive oil or coconut oil and heat it up. Add  the cumin seeds and let it saute and add ginger garlic paste and turmeric.  Add deep fried okra,  add chili powder, salt and amchur powder. Mix all of these well and stir for a minute or two and you are done….
