Okra Stir Fry

200-250 gms okra
¼ medium size onion, chopped (optional)
¼ tsp cumin seeds
½ inch ginger and 2-3 garlic, crushed or made to a paste in a mortar-pestle
1 tsp coriander powder
¼ or ½ tsp red chili powder
½ tsp turmeric powder
½ tsp amchur powder/dry mango powder
salt as required
2 tbsp olive oil

Rinse okra well in water and dry them on a large plate with a paper towel or  kitchen towel. Remove the base and stalk while chopping  into the desired size. Heat 2 tbsp oil in a pan.  Add  the cumin seeds and let it saute and add ginger garlic paste and turmeric.  Add chopped okra and saute till they are completely cooked. Make sure to cook them until they are soft. Add chili powder, salt and amchur powder. Stir well and saute for a minute or two and voila….
