Bitter gourd fry
2 – bitter gourds/peeled/sliced
1 tsp – turmeric
1/2 tsp – salt for the bitter gourd
1` cup coconut oil for deep frying
3 tbs unsweetened coconut shreds
3 garlic pods
1 tsp mirchi/cayenne pepper or to taste
1/2 tsp salt or to taste
- Wash the bitter gourd, peel the skin and chop them into tiny little slices. Add salt/turmeric to these and leave for 5 minutes
- Drain the excess water by squeezing the slices and put them in a hot pan of oil to deep fry.
- Ensure to fry these slices to golden brown and take them in a pan. Add the 3 tbs coconut shreds, salt, garlic pods, cayenne pepper or mirchi powder in a blender and make it a nice mix of dry powder. Add to these fried chips.
- Mix the powder with these fried crisps and serve it, you can store it in a mason jar the extra ones and they stay for a month 🙂
