Heat the oil over medium in a pot and add 1tbsp cumin/coriander seeds/ginger/turmeric. Add onion & celery, cook for 5 mins, Add zucchini and saute for 3 minutes. Add the almond butter and vegetable broth and bring to a boil. Reduce the heat to low and simmer for 5 minutes, until the zucchini is tender. Add the watercress and cook for 3 more minutes, turn off . Allow the cool slightly and transfer the mixture to your blender
