Low carb cookies

Ingredients
8 oz – 1 stick Kerrygold Irish Butter
4 Tbs. – erithyritol
2 c – almond flour
1c – crushed walnuts/pine nuts each
15 count dark chocolate chips
1 pinch of sea salt
2 tsp of orange extract
3 scoops of Dymatize protein powder (Birthday cake flavor)

Directions

  1. Preheat oven at 325. Leave butter out of the refrigerator at least 6-8 hours and it needs to be soft.

2. Mix all the ingredients with a mixer (or by hand) until very smooth. For time sake, mix with fork until a smooth consistency.

3. Ensure that the cookie dough is well mixed.

4. Form little balls with your hands and flatten them, putting them on a cookie sheet with parchment paper.

Cook for 13 minutes at 325 degrees, then let them sit out of the oven for 10 minutes. Transfer to the freezer until frozen. Then store them in the refrigerator.
