Zucchini-Avocado Soup

Ingredients:-

1 medium zucchini
1 avocado

1/3 of a small onion

4 garlic cloves
1 tsp cumin seeds
1 tsp coriander seeds

2 inches of ginger

1 tsp taco seasoning

10 macadamia nuts
1 cube of bullion or salt as needed

1/4 tsp pepper

4 cups of broth

2 tbs olive oil or coconut oil

Directions:-

Heat oil in a pan, add the the cumin/coriander seeds. Let them splutter and add garlic cloves, onions and zucchini for a few minutes. Add the broth and cover the lid and cook it for 5 minutes. Add all the rest of the ingredients and blend them to soup and serve it hot with a dash of pepper 🙂

Pumpkin Soup

Pumpkin Soup

Ingredients:-

 

2 cups  vegetable broth

2 tbsp – Ghee

1/4 cup  unsweetened coconut milk

3 cups fresh chopped pumpkin
1/4 cup sliced onions
3 garlic cloves

1/2 teaspoon paprika
1 tsp cumin seeds
1 tsp coriander seeds

1 inch ginger root
1/4 teaspoon cayenne pepper (optional)

1/2 teaspoon freshly ground nutmeg

salt and freshly ground black pepper, to taste

Directions:-

Heat ghee in a pan, add the cumin/coriander seeds. Let them splutter and add garlic cloves, onions and pumpkin and cook for a few minutes. Add the veggie broth or water and cover the lid. If you have a pressure cooker, let out a few whistles and turn off the flame. Once the pumpkin is cooked well, add this mix to the blender and the rest of the ingredients to make a smooth soup consistency.

Cheesy Broccoli Soup

Ingredients:-

1/2  broccoli head chopped
1 tsp cumin
1 tsp coriander
4 cloves garlic
1/3 rd of a small onion
1 inch of ginger root
1 cube of bullion
4 tbs ghee
1/2 cup of macadamia nuts
1/4 cup of mozzarella cheese
3 cups veggie broth
salt to taste
Directions :- Add ghee in a pan and heat, then add cumin, coriander seeds and let them splutter. Add garlic, onion and broccoli and let it cook. After 5-8 minutes add broth and cook it. To the blender add this sauteed mix and rest of the ingredients, broth and salt….yummmy – slurp it hot with a hint of black pepper 🙂

1 cup baby carrots
4 cups baby spinach
1 cup silken tofu
1/3 of a small onion
4 garlic cloves
2 inches of ginger
1 tsp taco seasoning
1 cube of bullion or salt as needed
1/4 tsp pepper
4 cups of broth
2 tbs olive oil or coconut oil

 

Directions:-

Heat oil in a pan, add the chopped onion, garlic, baby carrots and let them saute for about 10 minutes. Add the spinach and mix it well and cook for about 5 minutes. Add this mix to the blender, add rest of the ingredients and blend it for a few minutes. Add some cream or coconut milk if it suits your palette…
