PhotoGrid_1418003406148I am a software professional and live currently in New Jersey. I was born and raised in India and have been living in the United States for the past 16 years. During my free time I focus on living healthy and have been trying to reverse my epidemic disease – type 2 diabetes. I have explored a lot on how to live healthy through clean eating, mean training, going green etc. I am blessed with an awesome family and great friends. I love music but totally am tone deaf when it comes to singing, can listen to any kind of music – starting from spiritual to hip-hop, don’t believe in eliminating any genre. Love reading and enjoy nature when the weather is awesome…!

I started my WOL w/ Keto; the low carb, high fat/protein diet (on 9/28 and within 3 months of diet, have reversed my diabetes). It has changed my life completely, I reversed my diabetes and gained a healthier and a lean body.

Being a vegetarian(no eggs, no meat or seafood) it was a bit difficult finding foods with high fat/protein content but over the time I have experimented and worked out a few recipes which I would like to share with all of you out there looking for veg keto recipes.

  2. Anu, I was delighted to find your web site as I am in the process of adopting a keto lifestyle and don’t want to eat a lot of animal protein. However, looking at some of your recipes I’m a little puzzled at the quantities. For example, half a cauliflower for eight people as a main course seems a little spartan. Would you please describe what an actual meal plan would be and explain the protein content? Thanks! Sarah

      1. Your website has great recipes and congrats on reversing your Type 2. Your a1c is low now and your fasting is between 80 to 90, so do you still take any medication?

      2. Yes Vj, i need to be on medication, i am trying to taper off…but sugar numbers are fluctuating…hence working my way. Keep in mind i am highly insulin resistant and it takes a while to be off my medication completely!

  5. Thank you Anu for posting in Euphoric delights. Congratulations on your achievement. It is very encouraging and motivating . My difficulty is that I find it hard to stay on a particular diet/exercise regime for few weeks. How did you train your self to stay on your goal? Do you meditate every day? Thank you.

    1. Vandana – Thank you! This is a lifestyle change for me, been living this way for the past 4 years and i mix it up. Nothing is static with my workouts/food intake…I started with small goals and tried to challenge myself every time. It’s not easy but all your need is staying focused and you will get there…if i can do – you CAN do it too!

  6. Hi Anu,

Firstly kudos to you for taking care of yourself and motivating others to do the same :). I have been reading a lot about keogenic diet. Just had couple of questions. When you started eating this way how did you portion size or were you doing the macros method. Do you cook seperately meals for your family since my folks love all sorts of carbs roti, naan, rice. I get so tempted with all the Indian sweets too 😔. Also do you eat this way when you entertain people at home or When you attend an Indian party where majority of items are carbs loaded.
    Thanks!

    1. Hi SJ – i did my macros and calculated everything, and i regret not adding the macros for all the recipes but that’s something that i need to focus on. I have to plan/cook my meals so that i dont mix up 🙂 It’s difficult but once you plan your meals it’s way too easy to stick to this way of eating! Yes, no matter where i am i try to stick to this – i know otherwise what the outcome would be. With that said, when i have slip ups i really swing back to the track. Indian or American outings, i ensure i eat veggies/subzis or salads! if i am a bit skeptic then i stuff my tummy before heading out 😉

  7. That is wonderful and very inspiring! I’m glad I found Thai blog. It would help a lot of others like me if you can post a few of your sample menus of the whole day, including the times
You eat each meal and snack and quantity. Would really appreciate it.

    1. I don’t mind posting it, but no 2 individuals are alike and it depends on what your activity level is along with your height/weight and health situation! Thank you! Good luck!

    2. Yes, completely agree, it totally depends on activity level. I have started a similar diet with activity. But what I find difficult is, to get all needed elements of the sort like protein, vegetables and carbs I feel
Like I end up eating more than what I was eating earlier. For example, if we have the vegetable tofu soup from your blog, did you accompany some car a with it? Because for a diabetic person completely avoiding carbs means sugar will drop. That is why I think it will be helpful if you can put up sample of a day’s meal. You seem to have figured out how to
      Make it work.

  9. Hi Anu,

I have been following your blog. Can you do a post on IF fasting for beginners and your personal experiences with IF. I would love to hear from your experiences. I am followed your posts/recipes on dlife LCHF forum and posted few questions there for you. I am very much interested in IF but haven’t been successful so far. I started with having early dinner around 7 hoping that my next meal would be a breakfast next day at 8am. But I woke up middle of night feeling hungry and was awake some time and then figured out that I might be hungry and hence had to drink a glass of milk before i could sleep again. After I drank the milk I was able to sleep again. I haven’t done fasting anytime before. So what tips can you suggest ? After that I never tried IF as it messed up my sleep 😦 . My HbA1c is 5.9 and I am currently not taking any medication.

    Thanks
    Neha

    1. Sorry Neha haven’t been much on d-life…sure i can walk you thru the IF! But since you are a beginner i would suggest starting with 12 hours initially, that is if you eat your dinner at 7pm…till 7am next morning! Is there a way i can reach out to you directly?

Please watch this video, Dr Fung is the GURU of IF!!!
